Fermented foods play a fundamental role in supporting our microbiota and strengthening overall well-being\, reconnecting us with ancestral knowledge and living traditions. During this immersive course\, we will explore fermentation processes in depth — understanding how they work\, their history across cultures\, their nutritional importance\, and their impact on gut health. You will also learn how to safely ferment at home\, prevent and troubleshoot common mistakes\, and confidently create your own starter cultures. Join Lidia Rivas for a hands-on\, bilingual (English–Spanish) two-day immersion into the art of fermentation. Together they traveled through more than 30 countries\, dedicating themselves to crafts\, music\, tattoos\, and permaculture volunteer projects\, visiting natural reserves and discovering sustainable initiatives across five continents. Ten years ago\, while traveling\, she discovered fermentation and the possibility of creating food\, body care\, and cleaning products without relying on plastic or harmful chemicals. After arriving in Sardinia in 2022\, they began putting into practice years of study to shape a healthy lifestyle in harmony with nature\, in Sardinia they start the  project “La Era Nuova”\, that become very famous in all Italy. Now they are in Costa Rica participating at Ecovilla San Mateo project and teaching  sustainability and self production practices at Real World School.
