Fermentation is a natural transformation process in which microorganisms such as bacteria and yeasts convert sugars into beneficial compounds. For thousands of years, cultures around the world have used fermentation not only to preserve food, but to enhance flavor, increase digestibility, and improve nutritional value. Fermented foods play a fundamental role in supporting our microbiota and strengthening overall well-being, reconnecting us with ancestral knowledge and living traditions.
During this immersive course, we will explore fermentation processes in depth — understanding how they work, their history across cultures, their nutritional importance, and their impact on gut health. You will also learn how to safely ferment at home, prevent and troubleshoot common mistakes, and confidently create your own starter cultures.
Join Lidia Rivas for a hands-on, bilingual (English–Spanish) two-day immersion into the art of fermentation. This is a theoretical and practical course designed to give you both solid knowledge and direct experience. Each participant will go home with fermented products prepared during the workshop.

PDF handouts and detailed step-by-step recipes will be provided so you can confidently continue fermenting at home.
One week before the course, you will be added to a WhatsApp group for all communications and practical information about the location and what to bring. The group will remain open for 3 months after the workshop.

Lidia Rivas – Born in Guatemala, Lidia has always been deeply connected to nature and sensitive to environmental issues. In 2008–2010 she studied Environmental Sciences, but city life did not fulfill her. She then began a journey around the world, during which she met Davide. Together they traveled through more than 30 countries, dedicating themselves to crafts, music, tattoos, and permaculture volunteer projects, visiting natural reserves and discovering sustainable initiatives across five continents.
Ten years ago, while traveling, she discovered fermentation and the possibility of creating food, body care, and cleaning products without relying on plastic or harmful chemicals. After arriving in Sardinia in 2022, they began putting into practice years of study to shape a healthy lifestyle in harmony with nature, in Sardinia they start the project “La Era Nuova”, that become very famous in all Italy.
Now they are in Costa Rica participating at Ecovilla San Mateo project and teaching sustainability and self production practices at Real World School.
They are very happy to bring their courses to this part of the world as well.
Passionate about fermentation, gardening, and self-production, she firmly believes that change begins in our homes. Through her workshops, she teaches people how to reconnect with the earth and live in harmony with nature. She believes that self-sufficiency — not only personal but also social and communal — is the path to rediscovering the true place of human beings on this planet.
